Hawaiian Banana Nut Bread

3 c. flour
3/4 t. salt
1 t. baking soda
2 c. sugar
1 t. cinnamon
1 1/2 c. chopped macadamia nuts
3 eggs, beaten
1 c. vegetable oil
2 c. very ripe mashed bananas
8-oz. can crushed pineapple, drained
2 t. vanilla extract
1 c. shredded coconut (optional)

Preheat oven to 350°. Spray two 9×5-inch loaf pans. In large mixing bowl, combine flour, salt, baking soda, sugar, and cinnamon. Add nuts, eggs, oil, banana, pineapple, vanilla and coconut if desired. Stir until just blended. Pour batter evenly into each sprayed pan. Bake for 60 minutes, or until a tester inserted in center comes out clean. Cool in pan for 10 min, then remove to wire rack to cool completely. This is moist and delicious.
