Mexican Crêpes

1 can pie filling, any flavor
1 pkg. small flour tortillas
1½ c. sugar
1½ sticks of butter
1 t. vanilla
2 c. water
cinnamon and nutmeg, to taste

Equally divide pie filling between tortillas. Roll up like enchiladas. Place in 9×13-inch baking dish. Melt together sugar, butter, vanilla and water. Pour over roll-ups. Sprinkle with cinnamon or nutmeg. Bake at 350° for 40 minutes. Serve hot or cold. Serve with vanilla ice cream.
