Rhubarb Pie with Pineapple or Applesauce

3 c. precooked rhubarb
1 c. crushed and drained pineapple or 1 c. applesauce
1 ½ c. sugar
¼ c. flour
¼ c. milk
1 egg
2 T. melted butter or margarine
1 packet Knox unflavored gelatin
1-2 pie crusts, prepared
cinnamon and sugar, for dusting

Mix all ingredients until well blended, then taste for desired sweetness. Pour into prepared pie crust; add upper crust if desired. Slit crust and brush lightly with melted margarine and dust with mix of cinnamon and sugar. Bake at 425° for 40 minutes or until top crust is lightly brown. Cool for 1 hour before serving.
