Apple Puff Pancake

Ingredients

6 eggs
1 1/2 c. milk
1 c. flour
3 t. granulated sugar
1 t. real vanilla
1/2 t. salt
1/4 t. cinnamon
1 stick butter
2 cooking apples, cored, peeled and sliced
2-3 T. brown sugar

Directions

In a blender mix eggs, milk, flour, granulated sugar, vanilla, salt and cinnamon. Melt butter and pour in a 9×13-inch baking dish. Layer sliced apples in pan. Pour batter over apples. Sprinkle brown sugar over batter. Bake at 400° for 20 minutes. Remove from oven and dust with powdered sugar. Serve hot with maple syrup. Serves 6-8.
