Easy Lemon Pie

Ingredients

1 1/2 c. sugar
3 T. cornstarch
1/4 c. Real Lemon Juice
3 eggs, separated
1 1/2 c. boiling water

Meringue:
egg whites
6 T. powdered sugar
1/2 t. baking powder
1 t. vanilla

Directions

In a saucepan, combine cornstarch, lemon juice and sugar. Beat egg yolks and stir into cornstarch mixture. Gradually add hot water. Heat to boiling and boil 4 minutes, stirring constantly. Pour into baked pie shell. Beat egg whites until stiff, but not dry. Gradually add powdered sugar, baking powder and vanilla. Beat until soft peaks form. Spread over top of pie sealing in all of filling. Bake at 425° for 4-5 minutes or until golden brown.
