Venison Meatloaf

Ingredients

1-2 lbs. ground venison
1 lb. pork sausage
1/4 c. breadcrumbs
1/4 c. minced onion
1 T. parsley flakes
1 egg
1 1/2 t. salt
1/2 t. pepper
1/4 t. nutmeg
1 c. beer
1 c. brown sugar
2 t. prepared mustard

Directions

In a large bowl, mix together venison, sausage, breadcrumbs, onion, parsley, eggs, salt, pepper, nutmeg and 3/4 cup beer. Shape into a loaf and place in a greased baking pan. Bake at 350° for one hour. In a small saucepan, combine brown sugar, mustard and 1/4 cup beer. Cook over high heat for five minutes. Pour over meatloaf after 1 hour of baking. Bake 15 minutes longer, basting frequently.
