1 T. cornstarch
2 T. cocoa powder
2  T.  sugar
3/4 c. water
1/4 t.  vanilla extract
1/4 t.  instant coffee crystals  (optional)

Mix the dry ingredients in a large microwave bowl. Use a large enough bowl, to avoid boiling over. Add the water and whisk until well mixed. Microwave on high for 90 seconds, or until mixture boils; stir well. Add vanilla and cook another 20-40 seconds; stir again. Add coffee, if desired. Suggested toppings: unsalted dry roasted peanuts, coconut, or cinnamon sugar. Serves one.
